Startup participants work in the field of food and engineering science. They had a lot to work hard to create a taste, smell, consistency and the appearance of salmon - and it was far away! From pea protein, algae extract, vegetable oil and vegetable fibers, something like a test was prepared, which after heating was placed in a 3D printer. Salmon meat structure - orange fibers and white connective tissue - do not allow to adhere to traditional printing methods. It took the strictest control over the production of the structure of the product. By the way, the printer gives the product an extremely form - to hundredths of a millimeter, which is not available to a person.
Scientists believe that the salmon created in Vienna has a huge future.
